Vegan Banana Cream Pie Blizzards

It’s embarrassing how many blizzards I’ve experienced in my lifetime. It isn’t very comfortable. What I can tell is that 99% were banana cream pies (with peanut butter cups and lots of whipped cream).

Since I stopped drinking dairy, it’s been almost a year since I was able to indulge in this creamy, dreamy treat! This is a shame, as I consider a banana cream pie blizzard to be the epitome of summer.

After watching teenagers at Dairy Queen pour a mysterious yellow powder into my blizzard, I got the idea to make banana powder from banana chips. What is it exactly? No one knows.

It is important to note that it can be fooled with banana chips. Naturally delicious, naturally sweet. Huzzah!

This blizzard contains only seven ingredients and is 100 % naturally sweetened.

That’s it! This simple combination of ingredients creates a deliciously creamy banana cream pie that is dairy-free. Graham crackers or other vegan-friendly cookies are optional but highly recommended to get the full cream pie flavor.

Ingredients

  • One cup of raw cashews, soaked overnight or for 6 hours.
  • One cup almond or coconut milk, unsweetened (light or full-fat).
  • 1 tsp pure vanilla extract
  • If dry, soak dates in hot water for ten minutes and drain.
  • 2 Tbsp banana powder (ground banana chips)
  • 2 Tbsp coconut oil (melted)
  • Just ripe Banana (sliced)
  • Crushed vegan-friendly cookie (such as Nabisco Original Graham Crackers optional).

Instructions

  • Place your ice-cream churning dish in the freezer overnight to chill. Make sure to soak the cashews overnight OR for 6 hours the following day. Drain thoroughly before adding to the blender.
  • Use a coffee grinder, spice grinder, or mortar and pestle to grind your banana chips. Not all chips will crumble in a spice mill. You can use the parts that did not bite.
  • Blend all ingredients (except bananas and cookies) in a blender until smooth and creamy. Scrape down the sides as necessary. If you have a blender, use the “liquify or puree” setting to make it creamy and smooth. Add more banana powder, dates, or both if you like.
  • The mixture can be chilled in the refrigerator or freezer overnight. See notes if you don’t own an ice cream maker.
  • Add the chilled mixture to an ice cream machine and stir according to the manufacturer’s instructions. This should take about 45 minutes. It should look soft serve.
  • To create a true blizzard, spoon the mixture directly into 2-3 glasses (as written in the original recipe // adjust the batch size if you are altering it) and top with sliced bananas and vegan cookies. Top with Coconut Whipped Cream.
  • Transfer the mixture to a freezer-safe container. Cover and freeze until firm, about 4-6 hours. Scoop as ice cream.
