We are off to explore new countries with our friends in a foreign country. I am so excited to be a) touring Europe and eating pastries while wearing a scarf and b) that I can bring you tasty eats all at once. The wonders of the internet. I love my work.
These waffles are a healthy way to celebrate fall. They contain pumpkin and cornmeal *. I made a version before but wanted something more entree-like. The experiment was a roaring success.
The waffles require only 30 minutes to prepare and one bowl. They’re also vegan, and you probably already have the ingredients on hand.
Pumpkin? Check. Cornmeal? Check. Check. What a great idea!
These waffles have a cornbread-like texture and a slight pumpkin flavor. The seasonings and the mix-ins are all very customizable. I chose salt, pepper, and green onion. Garlic, jalapenos, and chives would also work well, as would a few slivers of cheese.
You don’t need to add an egg like I did. The maple syrup, butter, and butter would work just as well. They would be amazing with some sliced avocados or vegan chili. What? Who said that…
Ingredients
- 1 Tbsp flaxseed meal (to make flax egg)
- Use 2 1/2 tbsp of water to make flax eggs.
- 1 Tbsp of non-dairy (melted) butter (or sub coconut oil or avocado oil).
- 1 1/4 to 1-1/2 cups plain unsweetened almond milk*
- Pumpkin puree, 1/2 cup
- 1/4 tsp. salt
- 1/4 tsp Black Pepper
- 1 1/2 tsp Baking Powder
- 1/4 cup yellow cornmeal
- Use 1/2 cup of whole wheat pastry flour or all-purpose (sub blend of gluten-free flour if you want a GF version)
- 2 Tbsp finely minced chives ( optional ), green onions or jalapenos
Instructions
- Prepare flax eggs by mixing flaxseed and water in a bowl. Let it rest for five minutes.
- Add salt, pepper, and baking powder to the pumpkin puree. Whisk until combined. Add almond milk and whisk again.
- Then, add the cornmeal, flour, and chives. Stir until combined. Let the batter rest for five to ten minutes while you heat your waffle iron.
- Spray the waffle iron generously with non-stick spray and then pour 1/2 cup of measurements onto the griddle. Close the lid and cook according to the manufacturer’s instructions (it should take about 3 minutes).
- Serve with a warm serving of vegan Chili or salsa and avocado slices (for non-vegans).
